Compelled by some fire inside our brains, we assembled an A-team of hops, yeasts and malts.

Fever's a cloudy IPA with a blend of Vermont yeasts from New York. American hops like El Dorado & Simcoe went in too for the double hopping, and Citra & Mosaic were added in for a lupulin finish. The flavour leans towards citrus and the tropics, with oatmeal paired with Viennese malts adding a silky softness to taste. A fever for every evening.

A Pan-Asian fusion of flavour, Enzo is an imperial stout, boldly combining sweet and spicy.

The world might be perched on the bring, but we've found the ultimate balance in taste. Introducing Aspect, our new red hopped IPA.

We've harnessed the synergy of Columbus, Chinook, El Dorado and Vic Secret hops along with caramel malts to give Aspect a high hop bitterness balanced by sweet malt notes. Giving you citrus-pine notes, dry taste and a pleasant 8.4% proof.

In a secret brewing lab, humanity waited for a scientific breakthrough. Studying combinations of hops, yeast, fruits and berries, we created a farmhouse-shaped teleporter to take us from stuffy concrete cities to an endless sea of summer fields.

Tardis continues our series of farmhouse ales, this time with the addition of mashed plums. Its delicate plum sweetness complements the soft, spicy aroma of Columbus and Cascade hops, adding up to a refreshing aftertaste. For those times when you gotta hop to another dimension.

Winter in St. Petersburg this year was full of snowdrifts, pedestrians in down jackets, and so much ice that the only way we've coped is with memes. Looking at the corrugated, lacquered roads, rippled as if a really weird wind was blowing, we obviously started thinking of something warm to match. Ours is a unique kind of flow, very imperial, and we've layered in bright synths to make a stout for a season on its way out.

Synty-Flow, done up in the style of a moderately sweet and thick imperial stout, with subtle shades of milk chocolate and strong coffee. For a truly Petrograd colour we filled the boilers with air, like clouds in a clear winter sky, along with vanilla marshmallow from the local Neva confectionary factory. A variety with warm strength, desserty density and a sweet, vanilla-chocolate taste and aroma.

It's turned out that part of our credo's been the creation of thick, black varieties on the edge of potions. A stout's a style of infinite taste depth, like the cosmic expanse we so rarely see above the St. Petersburg sky. This time we dove right in, literally speaking, turning to a double stout as a base and shooting it through with an intriguing combination of ingredients.

We used cocoa beans ground by hand to give a profile of burnt chocolate and caramel, complimented by gentle mint and the immersive sweetness of airy cocoa. Next we threw in a shot of pepper spice for a sharp aftertaste. A real mashup of sensations in a glass.

This grand imperial stout was brewed in small batches for our 5th anniversary. To soften this powerful and silky imperial stout we threw in "Jubileinoe," old-school Soviet cookies. We rounded things out with vanilla, lactose and roasted oat flakes. This is more than a draught: it's a special dessert with creamy, chocolate-vanilla tones in taste and aroma.

CHERRY SWEET STOUT

The sky's growing darker every day, so we decided to brew something up with a dollop of sunlight: a life-affirming stout with a litre of berry juice.

We threw in a generous portion of lactose to keep things bright, along with dark malts for a deep, pleasant colour. A handful of oat flakes soften and strengthen chocolate-milk taste, and we added cherry nectar during pre-fermentation to up the juiciness. Which adds up to a noticeably sour base with a full, peely shade of tart – making for a dense brew gushing with fruit.

LEMONGRASS WHEAT ALE

A refreshing, American-style wheat ale fermented with classic, viticultural yeast and the addition of lemongrass or lemon sorghum, both revered in Asian cuisine. This cheery and positively herbal taste with lemony tones is smoothed out with banana-cream notes of wheat malts in the base.

We added a lot of juice from ripe berries from both poles – cherries from the south and cranberries from the north. Dry hopping with Citra adds the aroma of citrus gardens, and all the contradictions of an Indian summer can be found in this strong, sweet and sour-hopped ale.

DDH OAT IPA
CATALYST

We continue to tweak the IPA for ourselves. Catalyst is our latest experience with double dry hopping, and we gave the incredible lupulin pollen strain a go. With a handful of silky oat flakes thrown in for good measure, of course.
Since the sun's been making a slow return back down to the horizon, we also decided to add a little light to the mix. The brew turned out quite bright, with a gold sheen thrown off by the specially-selected oat flakes making up a third of its makeup. This mighty proportion gently clouds the drink, complementing the hoppy lupulin from Mosaic and Citra.
The aroma's saturated through with fruit and fresh hops, along with a scoop of Amarillo to taste. Thick and soft – like a crisp, sunny autumn morning near a clean oat field.

CRYO DDH IMPERIAL IPA

Cryogenic temperatures were on track to reach maximum levels but then, Houston, we found ourselves a Rokot: our new Imperial IPA dry hopped exclusively with loads of lupulin pollen!
For this one we used lupulin from Simcoe, Mosaic and Citra hops, which gives off a powerful citrus-tropical aroma that doesn't taste too bitter. We threw in oat flakes for balance and fermented the batch with the Coastal Haze Ale Yeast liquid yeast strain, brought in from the American outfit at Copenhagen's White Labs.
A rumbly aroma with a pleasant balance of hoppy bitterness and a light sweetness.

Our new brew was hopped with Simcoe, an example of lupulin pollen, giving it the ultimate citrus-pine aroma without upping the bitterness. To make the flavour as smooth as possible, we used wheat malt and fermented it with a classic New England strain of yeast from Vermont.

One of our biggest wishes is to do something bright. There's something about working with bright colours, a kind of jubilation that can be enhanced by throwing in the truly extraordinary. This might sound in line with neo-Romanticism, and Assol is indeed a brew full of such surprises.
A milkshake pale ale blooming in a gentle pink, peeling back layers that reveal berry notes. Everything's softened with a creamy sweetness and a spritz of hops. We threw in strawberry puree for a hint of summer freshness, along with dry hopping with Mosaic and Citra.

Contemplate the masterpieces of neo-gothic architecture – they're imbued with the ideas underlying it, striking into the sky in elegant and slender forms. Impressed once and for all with what we saw, we knew we had to come up with a craft brew that reached for these very ideas: Zvon, the Russian word for the ring or gong of a great bell.
An airy pale ale with the easy jingle of hops, raspberry puree and lactose. It rings the clear, deep berry tone thanks to the addition of Mosaic and Citra hops. Its refreshing pink colour tops off any sultry summer day.

The first days of summer in St. Petersburg are special. Not only because they're sacred (telling fortunes by the weather's more than just a schoolgirl's game). Not only because the season's opened with regular Restaurant Days flooding the city. But because on the first and second of June we celebrate the birthday of our alma mater and beloved headquarters: Bakunin Cafe.
This time, in the hallowed halls of 2nd Sovietskaya 25A, we celebrated our fifth anniversary. It was, in all truth, downright magical. But even on this most radiant of days you can't drink a cake, so one notorious personage turned for a moment into a fairy godfather and, with a wave of his wand, conjured a New England IPA with the musical name Star 69.

A Session milkshake ale, with 50% of its sweetness and softness coming from the wheat malt we thought to throw in. We used mandarin puree as a fruit base, layering both citrus-sour and a light tartness on the ale's otherwise unobtrusive background. The word 'geek' has many connotations, most of which aren't necessarily related to beer. How many of us watched "The Big Bang Theory," which shot the term into the stratosphere? Not to mention the ways pop culture collides with popular science (or at least its pretense): take that time "Rick and Morty" forced McDonalds to restock Sichuan sauce after decades of obscurity.
We're not insensitive to the demands of the people, and so our latest spin on the Berliner Weisse has a dash of Szechuan pepper and it's taken a life of its own. So we couldn't resist naming it after one of the show's oddball heroes. The classic balance of hops and sour is complemented by a bonzo spicув aroma and a light, witty aftertaste

Tropical Zatmenije (Russian for "eclipse") is the jacked-up older brother of the regular Zatmenije, everyone's favourite imperial stout. We brewed this one with roasted coconut shavings and a dash of vanilla, adding up to a strong (beach!) body that's pretty damn irresistible no matter the season.

A juicy IPA for a new generation, Summer of Haze is as bright as the glints of sun on water, and refreshing as a sweet, Saint Petersburg downpour on a sultry afternoon. Without bitterness. We've enriched the fruity effect with DDH and the help of the latest crops of Vic Secret, Citra and Eldorado. Need a fresh drop of tropical sunlight? We've brought it to you in a jar.

SUNSTROKE

Summer is coming. Sunlight breaks through over the city. Facades shimmer in its rays, warning the citizens of the world's megacities of the dangers of sunstroke.
Sunstroke is our summer hit, with hops! With a bright, golden colour, this IPA's been double-hopped on the base of Simpsons extra pale ale. Simcoe and Galaxy give it a rich, fruity-citrus aroma and taste, and oat flakes soften the bitterness through to a dry aftertaste.

In a world where knowledge goes stale in a matter of hours and access to information can define whole societies, it's inconceivable to ignore the inevitable march of progress. We can't go back now, knowing that -122 degrees on the Réaumur scale is the upper threshold of cryogenic temperatures.
For this luminous DDH IPA we turned to Simcoe hops with a little help from cryogenics. A dash of lupulin pollen was used in the double dry hopping, lowering the bitterness, and we upped our game by adding hints of spruce needles to complement its citrusy juiciness.
We took inspiration for the artwork from the details of the world around us, and so poured Reaumur -122 into high-resolution cans.

MOSAIC DDH IPA
KELVIN 120

120 degrees Kelvin is the starting range for low temperatures that can change the properties of substances. Obviously we haven't finished our experiments with Cryo Hops.
Kelvin 120 is a DDH IPA with a double dry hopping with Mosaic that's undergone cryogenic treatment. Lupulin pollen gives it a fragrant flower-fruit aroma, saturating the taste right through and playing down its bitterness. As for the design: if they give you lined paper, it's only an excuse to write diagonally.
