We often find our hands full with interesting team-ups when we follow our creative instincts. This time we've collaborated with Roots United, dreamers who've given rise iconic festivals of electronic music and modern art, to create a perfect summer taste combo: passion fruit and gooseberries.

Fruits United is a refreshing sour ale saturated with both of these miraculous fruits. It has a tender, enveloping, engaging texture thanks to layers of oatmeal and lactose, making it a perfect 0.33 addition to a mid-June evening of music on the waterfront. This is the rhythm of freedom and unity. This is the ultimate Day Off.

An April duet with our friends from Ostrovica was dedicated to variations on fruit and berries. What we ended up with was a liquid synonym for summer, a bright and balanced elixir against the heat: Bloody Simple.
We drew on blood oranges and blackberries and brought them together into an expressive milkshake. Think citrus sourness and berry sweetness seeping onto your pallet. Think a delicate texture matched against a colourful hue. Think a rush of vitamins C and P.

Dreaming of a perfect lime pie, we challenged our buds from Green Street Brewery: who can capture the flavour that captivated 19th century America?

On that very spring day, March 8th, we added lime puree to Yella and hopped it up with Idaho Gem, our latest botanical discovery. This opaque, slightly sour and bright-lime Milkshake IPA is our adaptation of the classic Florida cake recipe. To the envy of Floridians everywhere, we rolled up with our version of the pie in a can.

In 2018, a notorious brewery snuck onto the world's highest dance floor and broke out into a feverish line dance under the noses of beer lovers from across East Europe and the CIS. At the point where one year ends and another begins, we met with friends in St. Petersburg from the neighbouring Belarus Midnight Project to brew up an imperial stout under a wild New Year's Eve. Its 30% density layers into a chocolate sweetness, with a dab of maple syrup and roasted coconut chips added during fermentation. With every sip, the mind can't help imagining shelves of rich desserts, each with generous helpings of maple and tropical walnut. And its thirteen-degree proof will make your body move like the laws of physics are one more thing heading out of fashion.

BRUXELLENSIS TROIS NE IPA

Saturday morning in December 2018 found us brewing with friends from Tula. It's more than a little symbolic that two names met that day: Bakunin (Mikhail Aleksandrovich) and Peter Petrovich (Belousov). They were both thinkers and practitioners, scholars and husbands, fascinated by culture and science. When these kind of stars aline, we can't just not team up for even an unassuming craft variety – in the end we chose to use the strain Saccharomyces Bruxellensis Trois. It's long been considered too wild but it responded well to being cultured, proving most brewers wrong. Yeast is a being all its own, showing once again how often we don't know the true shape of a thing and approach it with our preconceptions and prejudices instead.
Following this line of thought we had the idea for a new spin on the NE IPA, with added oatmeal flakes. We used the classic El Dorado and Galaxy duet, along with Mosaic lupulin to add a greater hop sensibility to the cocktail. Despite everything it turned out to be a tropical juice, calling to mind summer mornings spent in parks on the holidays.

Despite the information overload, the middle of September found us hanging out with our friends from Brighton, England: the team over at Lost + Found. On the outskirts of autumnal Saint Petersburg, our first Russian-British collaboration (in the style of a DDH Imperial NE IPA) was born. Taking notes from our colleagues' expertise on keeping IPAs juicy (along with their penchant for an experiment or two), we didn't use hops like we normally do. Instead, we unleashed the power of its natural freshness and lupulin in a whirlpool along with a couple rounds of dry hopping. In the end we got a dry, hoppy nectar with exquisite bitterness saturated right through with the citrus and fruit flavours of Citra, Mosaic, El Dorado and Galaxy. For its name we let our partners do their thing – they often turn to the magic of numbers for their own creations, and so now our guests have one more reason to remember the year of their hometown's founding: 1703. Drink exactly at 17:03.

DOUBLE COLD BREW COFFEE STOUT

As you very well know, the geography of our brewing extends far beyond St. Petersburg up to the borders of glorious Latvia. Representatives from our team drive to these regions on a regular basis – by themselves, mind you, not on a bus. Which can be exhausting. One of the few ways to recoup after such a long trip is freshly brewed coffee and, here in Riga, we have friends for just that: Rocket Bean Roastery. One fine morning we got the idea to make a craft beer with a generous helping of their cold brew, based on personally roasted Brazilian beans. That's when Doppio came into existence.
A double stout with all the pep of a cup of joe but, thanks to the addition of cold brew, without the bitterness. We rounded things off on a light, sweet note by adding in carmelized and roasted malts.

This one's based on a smattering of barley and wheat malts with added oatmeal. The structure turned out quite creamy, so we rounded things out with the hop bitterness of Falconer's Flight, Citra and Galaxy.

We dreamed up the Warsaw Express to be the set of wheels to get you where you need to go. This is a wheat wine made creamy with added lactose – we threw in orange and grapefruit peel for a real fruit gamut. We dry hopped with Citra to add a slight bitter note so the creamy taste don't melt you away entirely.

FARMHOUSE ALE

A comedic collab with the Americans at Oxbow Brewing Company, who specialize in riffs on Belgian farmhouse ales. This variety is no exception: we used two strains of yeast here, one of which is used by the Belgians to make Brasserie Dupont. It turned out as a classic farmhouse ale with clear spicy notes and a dry, refreshing aftertaste.

In the first half of April, part of our time went to Lithuania to join local crafters Sakiškės Brewery for a joint brew. Enjoying the first stitches of spring, under a clear Baltic sun, we dreamed up one of our more surreal collabs: having harvested a crop of marshmallows, they infused them into a succulent New England IPA and ran it through sour kettle tech so it blooms with an unexpected sour-fruity taste. Topped off with a light, sweet aroma.

Boys Don't Cryo is the fruit of our hangouts with the creative Bulgarians at Borefts Bier Festival 2017. This is a new wave pilsner, dry hopped with Citra and Simcoe cryo hops and brewed up specially for walking along southern sea quays. Fresh, light and saturated with lupulin pollen, we took its name from a 1979 The Cure album. When you need to keep your strolls rhythmic and light.

With our history of heading to the Borefts festival, dreamed up by Brouwerij De Molen, it was only a matter of time before that famous, Dutch creativity percolated down into our brains. Together with Menno Oliver and his team, we trained our sights on barleywine and its main ingredients: notes of dry fruit.
We threw it all into a real symphony – a generous helping of raisins and dried apricots were tossed into fermentation, a first for both our breweries. And so we got our ten-degree fruit barleywine Terpenije & Trud (Elbow Grease), ready to polish away all your doldrums!

HERBAL SESSION IPA

This one's the result of a joint brew with a team from the Third Rome itself (after which there will be no fourth): the Muscovites at Seven Hills Brewing Co. For the summer season, keeping in mind this unexpected May heat, we wanted something light and with old school hops – but not without something fresh. It's simply impossible these days to make a conventional IPA, and so the charm here was in layering in matcha, a Japanese camellia, along with lemon zest.

This combination of Asian and American cuisine made a lasting impact, prompting us to ask ourselves that classic question from 19th century Russian salons lining the Neva or Moscow: who are we? Westerners, or Slavophiles?

ALMOND BARLEYWINE
THE USUAL SUSPECTS

On a frosty January morning, after an evening of bar hopping around Latvia's capital, we were inspired by the news that we'd be taking part in BPBW 2018. This only brought home to us the deeply satisfying combination of creative ability and gentlemanly determination. So we wanted to make a brew that could be savoured in the evenings, reminiscing over warm meetings just like these. That's why we turned to barleywine, and to add local colour we added what might be called the "Hungarian walnut": almonds.
It turned out to be a dense and thick barleywine, similar to Amaretto liqueur, with a spicy sweetness, a dry nut tarness and slight traces of bitter hops. We took the name from a film in the 90's that highlighted what a motley crew we've become. This isn't any ordinary brew, but then again we aren't the usual suspects.

BARREL AGED SOUR APRICOT STRONG ALE

Born of ideas and deeply-layered dreams, it came into the world and was shipped straight off to an Italian barrel with help from our friends at Birrificio Del Ducato.
It's a blend of three different versions of Belgian strong dark ale from Birrificio Del Ducato's maestro, Giovanni Campari. One of them's fermented only with Brett, the second with lactobacillius, and the third within the barrels of the red wine Brunello di Montalcino.
If you think our fantasies stopped at that, think again: we took the blend and aged it in wine barrels for three months with fresh apricot. Keep the dream alive!

Straight from Hamburg, brewed up in cahoots with the local pirates over at Buddelship Brauerei, this Imperial Wheat Stout unites German and Russian imperial traditions. With a long stretch untouched by filtration, its thick body is born from a 50-50 fusion of wheat and burnt malt, only to be tempered with banana, chocolate and coffee notes to leave a light, creamy taste with a powerful proof.

Our joint brew with Bottle Share Brewery in 2017 turned out, in body and design, to be a true northerner. When it comes to our collabs, we continue our streak of dreaming up robust, trailblazing beers inspired by the Baltics, particularly Latvia's vigorous gastronomic traditions. Our latest entry finds inspiration in Rupjmaize, that nation's original, sweet rye bread.

This craft variety's been styled as a rye wine, drawing on traditional Rupjmaize recipes: rye malt, caraway seeds, a dense body and a high proof, with a sweet malt taste and an aroma hinting at freshly baked bread and cumin.

Brewed on the Apennine Peninsula, Togliatti has absorbed a local juiciness and colour that expresses itself in a citrus aroma. Simcoe dry hops bring out even more freshness, with an added dash of fruity notes. Despite a healthy bitterness, the body remains soft and its dry aftertaste only underlines an indomitable character.

All with a rich aftertaste of honey and marsh herbs.

A wildly refreshing sour IPA with addition of natural grapefruit tastes like a fresh fruit honey dew, where riot of powerful citrus aroma and bitterness is well balanced by delicacy of oatmeal and viscous fruit sourness.

A craft beer brewed in collaboration with the Estonian brewery Tanker. A wild ale fermented with black currant and special hops shipped over from America, part of which was sent for barrel aging in one of the winehouses located in the Montalcino commune. This ale packs a punch with berry sourness, hop bitterness and a dense ruby colour.

Sabotage is a Double Red IPA with added black elderberry juice and a generous helping of hops and the best malts! Elderberry gives a deep ruby colour as well as a subtle, tart taste. It's soft, hoppy bitterness is balanced with tones of caramel. We dry hopped this brew with a type of Australian Super Pryde, famous among connoisseurs for its sprucy and earthy aroma.

"Leningradets", named after the citizens of our great cultural capital, is Russia's first real oatmeal wine. A strictly oat-barley craft brew, its notes of blossoming lilac grant elegance. We've gone and topped it off with caramel, dry fruit, iris and that syrupy body we've missed for so long.

Our meeting with Tony Lawrence, founder and brewer-in-chief of Oregon-based Boneyard, turned into an opportunity for a joint take on the Notorious IPA right here in Saint Petersburg. In our version, we replaced American hop strains with so-called Southern Hemisphere Varieties. As in, hops grown and harvested in the southern hemisphere (Galaxy, Vic Secret, Wakatu and Enigma). Then the guys from Machete Speed Crew, all fans of a powerful IPA, joined up and reminded us of the legendary American HEMI engine, which has terrified the competition since the early 70's.
